The perfect meal inspired by the old American Southwest. Nopal Salad (Cactus Salad) • 2 cups of nopales • 1 cup Cilantro • 1 1/5 cups Tomatoes • 8 ounces Panela Cheese • 1 tablespoon Garlic Powder • 1 tablespoon Onion Powder • 1 1/5 tablespoons Oregano • 3 tablespoons Lime Juice • 1 teaspoon Salt • 1 teaspoon Pepper • 1 tablespoon Olive Oil 1) Cut nopales into small pieces and boil for 20. Rinse off and fry in olive oil for about 10 to 15 min with garlic powder and onion powder. 2) Dice tomatoes, cilantro and cheese, add to mixing bowl. 3) Add nopales to salad along with oregano, salt, pepper and lime juice. Mix everything together and then let it sit in the fridge about an hour before serving. Yucca in Herbs • 1 large Yucca root • ¼ cup Cilantro • 2 tablespoons Butter • 1/5 tablespoon Olive Oil • 1 teaspoon Salt • 1 teaspoon Pepper 1) Cut and peel yucca root, boil for 15 to 20 min or till soft. 2) Cut into smaller pieces and place in baking pan. Add butter, olive oil, salt, pepper and cilantro. 3) Bake for 30 min. Bacon Wrapped Dove • Dove (I recommend 3 to 4 individual birds per person) • Bacon (1 strip per bird) • Jalapeños (1 per every 3 birds) • Garlic cloves 1) Slice jalapeños and garlic. 2) Wrap dove in bacon with slices with jalapeños and garlic. 3) Bake for about 35 to 40 min.
